Forest trails are going to be a problem, because they're usually located on public land where off-roading is forbidden. Mud spots are a dime a dozen, however.
Wherever you do this, you'll want to make sure your butt is covered first. You want to get permission from whoever owns the land you'll be using, and you want a good winch. CAA and other roadside assistance plans don't cover off-roading, and their bills (trust me on this) can get really expensive really fast. One towing call usually costs twice what a winch does, just so you know.
